Abstract

Honey is a product consumed in large scale all over the world and plays an important role in the human diet, with emphasis on natural products industry for its antimicrobial activity as an antioxidant. The presented review, aims to characterize the honey, covering the main types of contamination and highlighting the importance of knowledge of honey quality indicators and the implementation of good beekeeping practices for obtaining the product with better physicochemical and microbiological quality avoiding the risk of contamination and favoring the consumer, providing a product that does not compromise the health.
