Alimentos comercializados em feiras livres contaminados por patógenos

Abstract

The sale of food in free markets is a reality in our country, either through the culture or socioeconomic status of the public that consumes this type of market. The unsanitary conditions of some of these markets lead to the presence of pathogens that are capable of spreading diseases that are transmitted by food. In view of this, this bibliographical review aims to identify through the literature the pathogens present in these foods sold at fairs. Being analyzed 6 scientific articles, articles selected through intersections of the following descriptors: Food diseases, Food Hygiene, Food poisoning, Market Sanitation, Salmonella, Escherichia coli, Helicobacter pylori. The following databases were used: LILACS (Latin American and Caribbean Center on Health Sciences Information), SciELO (Scientific Electronic Library Online) and Google Scholar. When analyzing the results obtained, it was found that the presence of Salmonella sp and Escherichia coli were found in food products sold in unhealthy situations, both in free markets and handlers. Salmonella and Escherichia Coli are agents frequently related to outbreaks of foodborne infections, meat products and vegetables presented undesirable microbiological percentages for consumption. In addition to propagation through previously contaminated food, there is also contamination through the market or conditions to which the food is exposed for its commercialization.
